Working principle
1.Atomization of Liquid Feed: The liquid fruit concentrate or puree is atomized into fine droplets using high-pressure nozzles or a centrifugal atomizer, breaking down the liquid into smaller particles for efficient drying.
2.Contact with Hot Air: The droplets are introduced into a drying chamber where they come into contact with hot air heated to a specific temperature. This hot air rapidly evaporates the moisture from the droplets, drying them into powder form.
3.Heat Transfer: Heat transfer occurs as the hot air extracts moisture from the droplets, causing them to lose moisture content and shrink in size. This process is facilitated by the large surface area-to-volume ratio of the droplets.
4.Evaporation and Separation: As the moisture evaporates, it forms vapor that is removed from the drying chamber by a ventilation system. Meanwhile, the dried fruit particles fall to the bottom of the chamber or are collected by a cyclone separator.
5.Adjustable Parameters: The spray dryer allows for the adjustment of various parameters such as inlet air temperature, airflow rate, feed rate, and nozzle configuration to optimize drying conditions for different fruit types and desired powder characteristics.
