Principle of industrial freeze dryer

  1. Freezing Stage: In the first stage, the industrial freeze dryer freezes the product, typically food or pharmaceuticals, to a very low temperature, usually below -40°C. This freezing process solidifies the water content within the product.
  2. Vacuum Stage: The freeze dryer then creates a vacuum environment around the frozen product. This low-pressure environment allows the frozen water (ice) to sublimate directly from a solid state to a vapor without passing through the liquid phase.
  3. Sublimation Process: Sublimation is the key principle behind freeze drying. It involves the conversion of ice into vapor, bypassing the liquid phase. This process occurs due to the low pressure and the controlled application of heat.
  4. Heat Application: Heat is applied to the frozen product, typically through heated shelves or trays, in a controlled manner. This controlled heating raises the temperature of the frozen product slightly, facilitating the sublimation of ice into vapor.
  5. Condensation Stage: The vaporized water (moisture) is then condensed back into a solid state, usually on a condenser within the freeze dryer. This condensation collects as ice on the condenser surface.
  6. Final Drying: The removal of water vapor continues until the product reaches the desired moisture content, resulting in freeze-dried product with extended shelf life, reduced weight, and preserved quality.
